Golab (Rose-Water)

The story begins with collecting the petals of “Gol Mohammadi” (Persian: Ú¯Ù„ محمدی, means Mohammad’s Flower) in the early morning. Actually, it should be done before sunrise, because otherwise the essence will be lost.The petals are collected in large amounts.
Mixed with water, the petals are poured into large pots.
And the mixture is boiled for hours. The steam goes through a cooling chamber placed in cold running water and converts to liquid. As the essence boils faster than water, this liquid is including more essence than water. The liquid can then be purified further to produce essence or filled into bottles and labeled Golab (Persian: گلاب, means Flower’s Water, also called rose-water) (see). A bottle of Golab costs about 3 CAN$ and is used in cookies and drinks. It is also proved to have healthy effects on the body.

Iran’s Golab capital is Kashan (see) and its neighbor Qamsar (see). Actually, Wikipedia introduces Qamsar as “the biggest center in the Middle East for producing rose water”. Both cities are in Esfahan province not very far from Natanz (see), one of the major nuclear sites in Iran.
